This has become my favorite salad to make. In fact, it is the only way I’ll eat cucumbers. (I don’t like them any other way than this!)
What makes this salad stand out are a few things:
The lemon and salt – this is what gets the juices flowing and the pops of flavor out of the fruits. The juicy cucumber and tomato create a delicious marriage! And the spinach and dill give it earthiness.
What I love the most? It’s super simple, quick and the ingredients are easy to find at home. Serve as a side dish, appetizer, or as a meal when you’re feeling healthy 😉
For this recipe, you will need:
1 chopped cucumber (about 1.5 Cup)
1-2 chopped tomatoes depending on size (about 1 Cup)
5 tbsp chopped red onion
1 C chopped spinach (about 1 large handful)
1 1/2 tsp salt
1 tsp dill
juice from 1/2 of one lemon
optionally use: *1 tbsp olive oil, *black pepper, *cayenne, *either fresh dill or dried dill
Combine all of the ingredients in a bowl and let chill for at least 15 minutes. The longer you leave it in the refrigerator, the more flavorful and juicy it becomes!
